You can appoint your father your attorney who can proceed with your mutual divorce case. At appropriate stage you can join divorce proceeding through video conferencing. Do not care nor bother for wife's opinion.

Indian courts have allowed VC appearance when:
Party is working abroad
Long separation already proved
Mutual consent is undisputed
However:
Many Family Courts still insist on at least one physical appearance

Since your wife is an advocate, she knows that courts often demand personal presence despite VC.
Courts insist on personal interaction with both parties to ensure:
Free consent
Absence of coercion
Possibility of reconciliation
A Power of Attorney holder (even father) cannot:
Give consent
